1 oz Cognaq
1 oz Amaretto
Fill with hot black coffee.
Top with whipped cream
Sprinkle with shaved almonds.
CAFE AU LAIT
Heat coffee cup/mug specialty glass.
Pour simultaneously equal parts fresh coffee (dark roasted),
scalding staemed milk.
You can leave a layerof froth on top of the mix.
Sprinkle with chocolate shaved or powder or cinnamon and/or nutmeg.

1 1/2 oz Dark Rum
1/2 oz Coffee Liqueur
Fill with hot black coffee.
Top with whipped cream.
Sprinkle with powdered chocolate.
CAFE BRULOT
Heat in sauce pan stirring continuously
2 oz Brandy
2 oz Orange Liqueur
2 oz fresh Black Coffee
2 tbsp Sugar
2 tbsp Orange Zest
2 to 4 Cloves
1 Cinnamon StickWhen hot to the touch remove from
heat and ignite, let burn 10 seconds.
Snuff with another pan and pour into
heat-tempered glass or mug.
CAFE CARIBBEAN
1 oz Rum or Vanilla Rum
1 oz Amaretto
Fill with hot black coffee.
Top with whipped cream.
Garnish with shaved almonds.
CAFE DIABLO
3/4 oz Cognac or Brandy
3/4 oz Sambuca
3/4 oz Orange Liqueur
Fill with hot black coffee.
Sprinkle with grated orange rind,
allspice and browned sugar.
Garnish with orange.

3/4 oz Banana Liqueur
